Paleo Pilipino dish: Beef Adobo in Coconut Milk
As promised here is my first attempt at making a paleo Pilipino dish. My goal is to create at least 7 paleo Filipino dishes that I haven’t seen online yet.
I’ve made paleo adobo before, but the addition of coconut milk adds a nice little twist. Add some veggies and it’s a lot easier to eat without missing rice (okay fine you might miss it a little. Rice usually balances out the vinegar for me, but the vegetables really do help).
Place beef chunks into a large pot. Add one can of coconut milk, vinegar, Tamari sauce, Red Boat fish sauce, garlic, bay leaves, and salt and pepper to taste. I didn’t use any salt and pepper myself finding the vinegar, Tamari, and fish sauce enough flavor. But whatever floats your boat. Bring to a boil, then cover the pot and let it simmer for about 30 minutes or until beef is tender.
Once tender add the second can of milk and the vegetables. Boil then cover and simmer till vegetables are cooked (about 5-10 minutes depending in what kind of vegetables you use).
As Uncle Boy would say “Boom! Der you go.”
